1 eggplant, sliced round
1 banana bud, cut fine
1 cup string beans, cut into 1/2-inch lengths
1/2 cup ground peanuts
2 tablespoons ground roasted rice
Salt to taste
Soy sauce as desired
3 tablspoons oil
2 cloves garlic, crushed
3 tablespoons chopped onions
2 medium size tomatoes, cut fine
- Saute garlic, onions and tomatoes. Add salt and soy sauce.
- Add the banana bud, string beans and then the eggplant.
- When the vegetables are slightly cooked, add the ground peanuts and roasted rice. Bring to a boil. Don't overcook.
- Salt to taste.
- Yield: 6 Servings.
